Ice wine is made from Vidal grapes, which are known for being a late vintage.
Towards the middle of the fall, we pick each cluster of grapes and place them in a small net in the field. Then, a natural chapping process occurs (loss of water with successive freezes and thaws.) Winter’s magic “burns and cooks” the grapes, followed by a natural physical-chemical process within the fruit that causes the elements of the grape to regroup themselves.
The frozen grapes are cold pressed to extract a flavourful and heady syrup that awakens the senses.
